Preheat oven to 350°F. In a large bowl, cream butter and sugar until light. Add flour, salt, and lemon zest; mix until crumbly. Press two-thirds of the mixture into a greased 9x9 pan. Spread raspberry jam evenly over crust. Sprinkle remaining dough over the top and gently press down. Bake 30–35 minutes, or until golden. Cool completely, dust with powdered sugar, and cut into bars.
